Olivia Pedroff, 27, was born and raised in St. Petersburg, FL where her family of Greek descent has been running small businesses since the 70s. Cooking has always been a passion, but her calling to the restaurant industry came in her sophomore year at Osceola High School’s Culinary Program, where her chef instructor saw her true potential.
Olivia started as an intern at The Birchwood Restaurant and Canopy Bar that same year where she ended up working throughout high school becoming one of the most valued members of their kitchen and catering team. She was then introduced to Johnson and Wales University that is known for their prestigious culinary school. It was in her opinion the only option for furthering her education. During 4 years at Johnson and Wales in Charlotte, NC, Olivia worked at Evoke Steakhouse, Heist Brewery, and The Flipside Café; ranging from freshly made pastas and crudos, to firewood flatbreads, to southern comfort food with local flare. She graduated with an Associate’s degree in Culinary Arts and a Bachelor’s degree in Entrepreneurship in Spring of 2018. A few months later she moved back home to St. Pete and worked at The Vinoy Renaissance Resort & Golf Club until she learned of a small sandwich shop for sale in Pinellas Park that’s been around for 20 years. Chef Olivia is now the fourth new owner of Roe’s Deli Station & Catering and in her 5th year of business. Olivia hopes to show the Tampa Bay area her genuine honesty, creativity and love of food by expressing herself through exciting specials, custom catering and selfless customer service. |
